    Baking is one of the things I love to do when I have time of course. Cupcakes is my favorite thing to bake. It is quick, no fuss and always flop proof. Flop proof in a sense that I never over mix my batter. Besides it being the easiest thing to bake, the end result is always different. Although the recipe and method stays the same, you can decorate it to look different every time. It can also be filled with caramel, fruit and chocolate spread.

    These homemade vanilla cupcakes are simple to make and delicious in taste. The texture is not dense and dry. I use oil instead of butter to make my vanilla cupcakes, which makes it moist and fluffy. With a few simple ingredients, this recipe is quick and easy. Which means you can have freshly baked cupcakes on your table in no time.

    Simple Vanilla Cupcakes

    • Servings: 12

    Fluffy, moist and just pure deliciousness.

    Baking time: 15 min

    Ingredients

    1½ cups cake flour
    ¾ cups sugar
    2 tsp baking powder
    ½ tsp salt
    ½ cup milk
    ½ cup canola oil
    2 eggs
    1 tsp vanilla essence

    Buttercream frosting
    125g butter (room temperature)
    2 cups icing
    2 tbs milk

    Directions

    Preheat oven to 180°C.
    Line a 12 cup muffin pan with paper cupcake holders.
    Sift dry ingredients together
    Add wet ingredients to dry ingredients.
    Beat well until batter is creamy.
    Spoon batter into cupcake holders.
    Bake for 15 minutes.
    Let it cool and frost.

    Buttercream frosting
    Cream butter with beater on medium speed. Add icing slowly while beating. Add milk and beat until light and fluffy. Pipe icing on cupcakes.

      These look beautiful and seem so easy to make. I will try them. My grandsons all love vanilla, rather than chocolate, cupcakes.
