• Cheesy Garlic Stuffed Mushrooms

    Cheesy Garlic Stuffed Mushrooms Mushroom are tasty and such a versatile veg and has great nutritional value too. It is low in calories and carbs but rich in fibre. But I must confess as a child I never liked mushrooms because of its texture. I found it to be rubbery, slimy and pretty bland. Until I reached my 20’s and it was cooked differently and let’s just say from then onwards I was hooked.

    If you still not a mushroom lover, then I hope my previous recipe or perhaps this one which is my cheesy garlic stuffed mushrooms will convert you. It is suitable for those who follow a low-carb diet too.

    Cheesy Garlic Stuffed Mushrooms

    Cooking time: 15 min
    Serve: 4

    Ingredients

    2 punnets of Denny Brown Mushrooms or 3 punnets of Denny Griller Mushrooms
    3 tablespoons softened Cream Cheese
    1 tablespoon butter (room temperature)
    2 cloves garlic (crushed)
    1 tablespoon parsley (chopped)
    ½ tsp paprika
    ½ tsp thyme
    1 cup grated Cheddar cheese
    2 tablespoons grated Parmesan cheese
    Salt and pepper for seasoning

    Directions

    Preheat oven to 180°C and line a baking sheet with parchment paper.
    Mix cream cheese and butter together with a handmixer.  
    Add garlic, parsley, thyme, paprika, salt and pepper. 
    Mix all ingredients well. 
    Give the mushrooms a good wipe with a cloth or kitchen towel.
    Spoon mixture into mushrooms.
    Top with parmesan cheese and then grated cheddar cheese.
    Place on baking sheet and bake in the oven for 15 minutes until the cheese is melted and mushrooms are cooked through
    Serve as it comes out of the oven.

      Sounds yummy. I too never really liked mushrooms until my first pregnancy. Even my boys (5 & 2 yrs old) enjoy it.
